I want to know if you could tell me why certain animals meet with us instead of someone else, or some other fate? How do we know if we have been with them before, and what is their lesson to learn, if their karma or reincarnation is based on the same as humans'?

A majority of animals large, small, fierce and powerful... when treated with love, affection and kindness, will return the same in kind. And they will remain devoted until they die... even if it means giving up their life. A majority humans tend to do the same.
Is it the animal attracted to the human or the human attracted to the animal... it goes both ways. Animals emit smell that other animals can distinguish... species, sex, disposition (gentle or mean), etc.. Humans also emit smell that animals can distinquish... mainly disposition (gentle or mean). However, humans cannot smell other human smell emissions (or an animals for that matter), and therefore must use other forms of interaction to distinguish whether someone is (gentle or mean).
The theory/belief that animals too could be reincarnated (as with humans)... is possible. Some folks would like to think that a certain animal (dog, cat or whatever), were meant for them alone... is okay. I, myself, would like to think that a certain someone would rather be with me and no one else.

Could you tell me a reason why some pets come live their lives with certain people instead of others, or live certain kinds of lives instead of others? Example: Why/How did my three cats end up with me, meet me, land with me, instead of with someone else? Did they know before hand? Did I? Was it destiny disguised as opportunity, or was it simply opportunity?

Pure chance... they came to be with you. If not with you, they would most likely be with someone else. Why are they still with you... they can sense and know that you are a good person and will not harm them. If you were a bad person, they had ample opportunity by now to run away.
To try and come up with a finite answer as to why things are... sometimes are not worth bothering. If it has some significance and importance, then go for it. If it really has no beneficial importance, let it go and do not spend time that could be put to better use.
Throughout our lives we may acquire many pets... I had three dogs and a parakeet. They spent their time with me and I with them... and then they moved on (to the happy hunting ground). Currently, I am pet-sittin' two of my daughters dogs (she is in the Air Force and stationed overseas). One dog is a miniature Pinser male (Gunner), and the other is a male Cocker Spaniel (Jake). I have had them for a year now and have gotten attached to them... and they to me. However, I am only pet-sittin' and have accepted the fact that one day my daughter will come for them and an empty void will remain when they are gone. I will not acquire another pet to fill that void - only the memories and pictures that I have of Gunner and Jake will hold that spot. My time with them has come and gone... and I will move on.
I love(ed) all of them and when it was/is their time to go, I will bid them farewell, thank(ed) them for being a part of my life, silently mourn(ed) for them and ... I move(ed) on with my life.
Why they are with us or we are with them... is not important. What is important... is the quality time spent together.
